2023 Bush Track Rosé

Harvested early March, fruit was machine picked and pressed directly to stainless steel. The juice was enzyme settled overnight, then racked cleanly for ferment with a selected yeast strain. Sulphured at the completion of primary ferment, the wine was then left on yeast lees for 4 months prior to stabilisation and clarification. Bottled in July 2023.
