The mild growing conditions of 2022 proved ideal for sparkling base, with a slow, steady accumulation of flavour, whilst maintaining the high levels of delicate natural acidity the style demands.
A small portion of our Alpine Valleys Chardonnay was hand picked in late February in absolutely pristine condition. A cool , controlled primary fermentation prior to tirage, and 15 months on lees to develop flavour and complexity. A bright, fine sparkling wine, with citrus blossom, white peach and lemon curd notes on the nose. Crisp ‘granny smith’ acidity on the palate, with flickers of meyer lemon and a little almond meal texture. An ideal aperitif style.
