2021 Bush Track Shiraz


Handpicked, with some batches crushed and destemmed and other destemmed only into open pots for fermentation. Fermented with indigenous yeast and gently hand plunged twice daily. Left on skins post ferment for 1-2 weeks before being pressed directly to barrel. matured in 20% new oak and seasoned French barriques before blending and filtration. Bottled in July 2022.
