Production Notes
Handpicked mid- February, the fruit was whole bunch pressed. Juice was treated oxidatively and filled to barrel with full juice solids for fermentation with selected yeast. Partial malolactic fermentation was allowed before adding sulphur. The wine was then matured on lees with occasional stirring in a combination of 25% new and seasoned French hogsheads, before blending and clarification. Bottled in January 2022.
Tasting Note
Deep straw in colour. Aromas of white peach and pear are interlaced with a sweet nougat undercurrent. Multilayered and complimented with attractive oak spice. The palate is crisp and creamy, with prominent white stone fruit and intense length. Time in bottle has allowed for lovely integration of oak. Will continue to age beautifully.
