The inaugural release of the Bush Track sparkling Shiraz. Made from select parcels of heritage clones, this is a vibrant, elegant wine.
Handpicked, destemmed and cold soaked for 3-4 days prior to fermentation in open pots. Fermented with indigenous yeast and gently hand plunged twice daily. Left on skins post ferment for 1-2 weeks before being pressed directly barrel. No new oak, matured on lees for 18 months prior to tirage then a further 24 months on lees in bottle prior to disgorging. 20 g/L dosage.
