The Conmara vineyard is home to a mature, mixed clone planting of Chardonnay, that whilst painfully low cropping, produces exceptional quality fruit. When volume and vintage conditions allow we take a small early pick specifically for a Sparkling Blanc de Blancs.
As sparkling wine drinkers we prefer the aperitif stylings of a Blanc de Blancs – bright lemony fruit, fine mineral lines, and mouth-watering acidity. Whilst a beautiful drink on release, cellaring for 5-6 years will see richer notes of toast, nougat and roasted nuts develop.
Our pristine Alpine Valleys Chardonnay is picked early in the season, when natural acidity is high, and delicate fruit flavours are beginning to emerge. This base wine is them put through the methode champenoise with secondary fermentation in bottle and 18 months on yeast lees to develop creamy complexity.

Delicate and lifted with citrus blossom, lemon curd and hints of candied peel.
A fine mousse, bright citrus fruits up front, with richer white peach notes through the mid palate, and attractive almond meal texture beginning to develop . A long, linear palate, with mouth-watering acidity, and a cleansing finish. An ideal aperitif style.
