Deep salmon in colour with red fruit aromas of strawberry forefront. Hints of red apple skins and lifted orange blossom pre-empt a palate packed with trademark strawberry and cream characters. Texture owed to time on lees is tied together with attractive acid for a lingering finish.
Harvested early March, fruit was machine picked and pressed directly to stainless steel. The juice was enzyme settled overnight, then racked cleanly for ferment with a selected yeast strain. Sulphured at the completion of primary ferment, the wine was then left on yeast lees for 4 months prior to stabilisation and clarification. Bottled July 2023.
