2017 Bush Track Shiraz

Vibrant aromatic lift of fresh berries and dark spice with cedar oak notes. The medium bodied palate is very even and balanced with charcuterie and spice flavours and suede like tannins. The bright acidity enlivens the palate and gives focus, leading to a smooth persistent finish.

Production Notes

Handpicked, destemmed and cold soaked for 3 – 4 days prior to fermentation in open pots. Fermented with indigenous yeast and plunged twice daily. At the completion of ferment given an extra 1 – 2 weeks on skins prior to pressing then filling direct to barrel, approx. 20% new French. Matured on lees without racking for 18 months prior to blending, filtration and bottling. Matured for a further 10 months in bottle.
